Keto Grilled Cheese Sandwich

Yield: One sandwich
  • 2 to 3 ounces favorite sliced cheese
  • 2 slices low-carb whole grain or gluten-free bread
  • 2 tablespoons coconut oil
Place cheese between the two slices of bread and spread one tablespoon of coconut oil on the outer surface of both sides of the sandwich. In a skillet, cook over medium-low heat until first side is lightly browned and cheese is beginning to melt. Flip and brown second side.

Variation: place a layer of thinly sliced tomatoes and/or spinach on top of the cheese.
